The fresh sheep ricotta is the classic Sicilian ricotta, made with sheep’s milk only. It has a soft and delicate flake consistency, and a good lactic taste, tastier than ricotta made from cow’s milk. Sheep ricotta can be used both raw, alone, and in combination with other ingredients, for the preparation of savory and sweet recipes.
